In 1924, Baron Philippe de Rothschild defied Bordeaux convention by bottling his wine at the château — a practice now universal across the region but then considered radical. That same instinct for rule-breaking defines every technical decision at Mouton to this day. The Plateau de Mouton rises to 27 metres above the northern Pauillac appellation on soils of deep Günzian gravel descending over five metres, underlain by clay-limestone and iron-rich marl — a profile that delivers both exceptional drainage and heat retention, concentrating Cabernet Sauvignon to a degree unmatched among its First Growth neighbours. The 2021 vintage emerges from a gravity-fed vat room housing 44 individual oak fermentation vats — Mouton remains one of the last Médoc châteaux to use oak as the primary fermentation vessel — enabling parcel-by-parcel precision across 90 hectares of vines averaging 44–50 years of age. Malolactic fermentation is completed in tank before the wine enters 100% new French oak barrels at medium toast, aged 19–22 months in the iconic 100-metre Grand Chai. Only parcels representing at most 50% of total estate production qualify for the Grand Vin label. The 2021 is the only vintage in the brand library without published critic scores, making it the most accessible current-release entry point into a cellar whose 2016 drew 99–100 points and whose 2020 was described as potentially perfect by Decanter's Jane Anson; drink 2027–2050.
