Domaine Hubert Lignier's Griotte-Chambertin originates from one of Burgundy's most prized Grand Cru vineyard sites, a 2.7-hectare parcel on the eastern slope of Gevrey-Chambertin. The vineyard's limestone-rich clay soil and northeast-facing aspect at 280–320 meters elevation create conditions that concentrate phenolic ripeness while preserving the delicate floral character Pinot Noir demands.
Lignier employs whole-bunch fermentation in temperature-controlled wooden vats, a technique that emphasizes aromatic precision and silky tannin integration. The wine spends 18 months in French oak (roughly 30% new wood), allowing gradual oxidative maturation without oak dominance. Malolactic fermentation occurs in barrel, softening acidity and adding subtle complexity.
The special distinction of Griotte-Chambertin lies in its mineral tension—the limestone terroir imparts a saline, almost chalky spine that distinguishes it from the broader Gevrey appellation. This is not a blockbuster wine; it is a study in restraint and site expression, revealing itself over 15–20 years in bottle.
Recent vintages (2015–2019) are entering their drinking window, though the wine will continue evolving through 2035+.
