Baron Philippe de Rothschild pioneered château-bottling in 1924 — a practice now universal across Bordeaux — and that same instinct for setting precedent defines every technical decision at Mouton to this day. The Plateau de Mouton, a gravel croupe cresting at 27 m in northern Pauillac, sits on Günzian gravel descending over 5 m into iron-rich clay-limestone marl: exceptional drainage that stresses the vine into concentration, while the gravel's heat retention extends ripening even in a cool Atlantic season like 2007. Parcel-by-parcel fermentation in oak vats — one of the last Médoc châteaux to retain them as primary vessels — preserves micro-terroir distinction before the blend is assembled. The wine then ages 19–22 months in 100% new French oak barriques (medium toast) in the iconic 100-metre Grand Chai, before egg-white fining and château bottling. Only the finest parcels, at most 50% of total estate production, qualify for the Grand Vin label. The 2007 vintage, cooler and more restrained than the flanking 2005 and 2009, draws out Mouton's graphite and cedar register over its more exuberant black-fruit opulence — a structurally leaner expression that rewards patience. No vintage notes or critic scores for 2007 appear in the château's published record; the drinking window reflects the estate's typical trajectory for moderate years.
