−11%Baron Philippe de Rothschild pioneered château-bottling in 1924 — a practice now universal across Bordeaux — and in 1973 achieved what no other estate has before or since: reclassification from Second to First Growth by ministerial decree, prompting the defiant motto 'Premier je suis, second je fus, Mouton ne change.' The 2012 vintage was also the inaugural year of Mouton's gravity-fed vat room, housing 44 oak fermentation vats of varying sizes alongside 20 stainless-steel tanks, enabling parcel-by-parcel vinification with minimal mechanical stress on the fruit.
The Plateau de Mouton rises to 27 m above sea level in northern Pauillac, its soils composed of deep Günzian gravel descending over 5 m over iron-rich clay-limestone marl — exceptional drainage that forces vine roots deep while the gravel mass retains solar heat through cool Atlantic nights. Vines average 44–50 years of age, with select parcels dating to 1890.
Malolactic fermentation occurs in tank; the wine then ages 19–22 months in 100% new French oak barrels (medium toast) in the iconic 100-metre Grand Chai before transfer to second cellars. Fined with egg white prior to château bottling. Petit Verdot was absent from all blends 2004–2015, making the 2012 a pure expression of Cabernet Sauvignon, Merlot, and Cabernet Franc — a structural signature unique within this era of the estate's history.
