Mario Incisa della Rocchetta planted Cabernet Sauvignon on the Castiglioncello hill in 1944 — decades before French varieties were accepted in Tuscany — and kept the wine entirely for family consumption until the commercial debut of the 1968 vintage, a deliberate withholding that allowed the style to mature on its own terms before facing the market. The estate's plots at 100–300 m a.s.l. sit on calcareous marl, gabbro, alberese, and the stone-studded alluvial soils that give Sassicaia its name (sasso = stone); the Tyrrhenian Sea moderates summer heat while the Bibbona-to-Castagneto hill amphitheatre blocks north-easterly winds, producing the bracing acidity and aromatic precision that separates this coastal site from warmer inland Tuscan appellations. Fermentation proceeds in temperature-controlled stainless steel at ≤28–29°C with estate-selected indigenous yeasts, malolactic completing spontaneously in steel before the wine moves to French oak barriques (Tronçais, Allier, Jupilles; extra-fine grain, light toast) for 24 months — approximately 40% new, 40% first-fill, 20% second-fill. The 2021 growing season opened with a polar 'Burian' cold snap driving February lows to −5/−7°C, causing natural bud thinning that reduced yields and concentrated the 85% Cabernet Sauvignon / 15% Cabernet Franc blend; the estate considers it a benchmark modern vintage alongside 2016. Sassicaia remains the only wine from a single estate in Italy to hold its own DOC appellation — a regulatory singularity with no domestic parallel. Drink 2026–2048.
