When Pierre de Lestonnac converted the La Mothe de Margaux grain fields to vine between 1572 and 1582, he was exploiting a geological accident: a raised gravel mound sitting above the otherwise flat Médoc plain, its Quaternary Garonne gravel draining so freely over limestone-clay marl that vines are forced into deep root competition, suppressing vigour and concentrating aromatic intensity. That 25-hectare plateau remains the heart of the Grand Vin today. The gravelly marl, drained further by the Lestonnat stream and tempered by the Gironde estuary's maritime influence, produces Cabernet Sauvignon of extraordinary finesse rather than brute weight — a structural signature no amount of winemaking can replicate elsewhere in the Médoc. In the cellar, fermentation proceeds parcel-by-parcel across nearly 100 vats — some as small as 25 hL — in a combination of oak and stainless steel, with malolactic fermentation completed in vat for free-run juice and in barrel for press wine. The Grand Vin then ages 18–24 months in 100% new French oak, much of it coopered on-site at the estate's own cooperage — a rarity among the five First Growths that gives the team direct control over toast levels and grain selection. Only roughly one-third of the harvest qualifies for the Grand Vin; the rest is declassified. The 2021 vintage is not represented in the estate's own published vintage notes, but the growing season was characterised across the Left Bank by a cool, late summer that rewarded patience and rigorous selection — precisely the conditions that favour Margaux's thin-soiled, late-ripening Cabernet Sauvignon parcels. Certified organic since 2017, with select parcels under biodynamic trials, the Grand Vin carries its terroir credentials from soil to bottle unfined and unfiltered.
