Château Olivier sits on the gravelly plateau of Pessac-Léognan's Left Bank, where deep Günz gravel over clay subsoil defines the appellation's mineral spine. The estate's 2021 vintage draws from this terroir's cool southeastern aspect, which extends ripening and preserves acidity through the growing season.
The blend is aged 18 months in French oak (approximately 50% new), building structure through malolactic fermentation in barrel. Cabernet Sauvignon anchors the assemblage, supported by Merlot and Cabernet Franc, a classical Left Bank architecture that reflects the site's drainage and thermal profile.
2021 was a vintage of moderate yields and extended hang time in Bordeaux—the resulting wines show ripe tannin maturity without overextraction. Olivier's expression carries the gravelly precision typical of the appellation: mineral tension beneath dark fruit, with the oak integration expected of a Grand Cru Classé in its youth.
Drink now through 2035. The wine will soften and integrate over the next 3–5 years.
