Château Chevalier's 2019 Pessac-Léognan originates from the gravelly plateau of Graves, Bordeaux's oldest classified region, where deep beds of Günz gravel over clay subsoil define the appellation's mineral signature. The vineyard's elevation and south-facing aspect accelerate ripening, concentrating phenolic maturity in the Cabernet Sauvignon-dominant blend.
Production follows Left Bank protocol: hand-harvested fruit destemmed and fermented in temperature-controlled concrete or wooden vats, with extended maceration to extract tannin structure. Aging in French oak (proportion and new/used ratio typical of the house style) for 12–14 months builds complexity without overwhelming the wine's mineral core. Malolactic fermentation occurs in barrel, softening acidity while preserving freshness.
The 2019 vintage benefited from a warm, dry growing season across Bordeaux, yielding ripe but balanced fruit—neither overextracted nor jammy. Gravelly soils' natural drainage prevented waterlogging during autumn rains, preserving acidity and structure.
Drink 2024–2035. The wine will develop secondary complexity over 5–8 years, though it shows approachability now.
