SaleSan Pedro's Alpaca label was built on a single premise: deliver varietal-correct wine from Chile's sun-drenched Central Valley at a price that requires no deliberation. The rosé is drawn from Cabernet Sauvignon grown across the broad Central Valley floor, where alluvial soils with sandy-loam topsoil over clay retain just enough moisture to moderate the intense summer heat and preserve natural acidity in the grape skins.
Winemaking is deliberately reductive: low-temperature fermentation in stainless steel with no oak contact and no malolactic conversion, a protocol designed to arrest oxidation and keep primary fruit volatile compounds intact. The result is a pale salmon-pink wine that skews dry rather than off-dry, separating it from many New World rosés at this tier that lean toward residual sugar.
What distinguishes this expression within the Alpaca range is the Cabernet Sauvignon base — an unusual varietal choice for rosé that brings a faint herbal edge alongside red berry fruit, rather than the purely floral profile of a Syrah or Grenache rosé. Drink young, within one to two years of vintage, while primary fruit is at its most expressive.
