San Pedro, founded in 1865 in the Maipo Valley, built Gato Negro as a volume label that nonetheless draws fruit from Chile's sun-drenched Central Valley floor — where alluvial soils over clay retain just enough moisture to moderate the intense summer heat and preserve natural acidity in the grapes. The Maipo Valley's continental climate, with its sharp diurnal temperature swings, slows ripening and keeps aromatic compounds intact through harvest. Gato Negro Rosé is produced from Cabernet Sauvignon, an atypical choice for rosé that gives the wine its deeper salmon hue and firmer structure compared to Syrah- or Grenache-based peers. Winemaking follows a direct-press, cold-fermentation protocol designed to lock in primary fruit character and prevent oxidative development, with no oak contact. The result is a bone-dry, unoaked rosé with a clean, fruit-forward profile anchored by red berry and watermelon notes. What sets this expression apart within its price tier is the Cabernet Sauvignon base — a grape rarely used for rosé in Chile — lending a subtle herbal edge absent in most entry-level pink wines.
