When Arnaud Mortet assumed sole stewardship in 2006 — inheriting a domaine shaped by the dual mentorship of Henri Jayer and Lalou Bize-Leroy — his first deliberate act was to strip back new oak and extraction, a direct repudiation of his father Denis's richer register. Lavaux-Saint-Jacques is where that recalibration is most legible. The south-facing parcel sits at the mouth of the Combe de Lavaux, a natural corridor that funnels cool air down from the plateau above Gevrey, moderating ripeness on vines approaching 60 years of age rooted in the limestone-marl soils characteristic of this mid-slope 1er Cru. That thermal brake is the structural argument for the site's precision. Hand-harvested into small crates, triple-sorted, and fermented with indigenous yeasts over 18–20 days, the wine undergoes minimal cap management — just five to six punch-downs per fermentation — before 16–18 months in French oak at a proportionally restrained new-wood percentage, then bottled unfined and unfiltered. What distinguishes this cuvée within the Mortet hierarchy is the Combe's cooling influence: no other Gevrey 1er Cru in the domaine's portfolio carries that microclimate signature. The 2020 vintage — hot, dry, early harvest — delivered concentrated aromatics and velvety tannins, with Arnaud's reduced-sulphur regime preserving the site's chiselled acidity. Drink 2026–2038.
