Jean-Pierre Guyon acquired his Clos Vougeot parcel in 2010, adding fewer than 0.24 hectares of the storied 50-hectare walled cru to an estate already defined by deliberate restraint. That restraint is structural: where most Côte de Nuits Grand Cru producers lean on new oak and pump-over extraction, Guyon builds architecture through 25–28 days of gentle 'infusion' cuvaison, cap management by hand-held watering can, and 4–5 days of pre-fermentation cold maceration before indigenous yeasts are allowed to begin fermentation at 27–29°C.

The Clos Vougeot's clay-limestone soils — among the heavier, more water-retentive terroirs of the Côte de Nuits — are met here with Guyon's proprietary 'en nuage' technique: a 30-person sorting team hand-removes central bunch stems, leaving intact berry clusters without rachis, an evolution of whole-cluster philosophy that preserves aromatic lift while eliminating green tannin risk. Élevage runs 10–14 months in new French oak barriques, followed by 3–4 months in stainless steel for integration, then bottled unfiltered, unfined, with minimal SO₂, timed to the biodynamic lunar calendar.

The special feature: Guyon applies this full 'en nuage' protocol to Grand Cru — no other domaine replicates it across an entire range. In 2021, a challenging low-yielding vintage flagged by Berry Bros. & Rudd as a benchmark for Guyon's low-intervention approach, reduced crop concentration amplifies the clay-limestone mineral grip.
