Denis Mortet's reputation was built so completely on viticultural integrity that retiring vignerons in Gevrey repeatedly chose to transfer their parcels to the family by trust rather than open-market sale — the Mazoyères holding is a direct product of that earned confidence. Mazoyères-Chambertin sits on the southern flank of the Chambertin Grand Cru belt, where the limestone-marl bedrock deepens and brown clay increases, lending the wine a broader-shouldered structure than its neighbour Charmes while retaining the iron-tinged mineral spine of the Côte de Nuits. Vinification begins with strict triple sorting and partial whole-cluster inclusion — Arnaud removes the main rachis from clusters before addition, preserving aromatic lift without green extraction. Alcoholic fermentation proceeds exclusively on indigenous yeasts over 18–20 days, with cap management limited to five or six punch-downs per fermentation to avoid over-extraction. Aging runs 16–18 months in French oak barriques, with new-oak percentage held deliberately lower than the Denis-era benchmark — a conscious generational correction toward transparency over opulence. The wine is bottled unfined and unfiltered, a non-negotiable at the domaine since Arnaud took sole control in 2006. In 2016 — a vintage that rewarded patient canopy management with exceptional aromatic definition and firm but fine-grained tannin — the wine sits in a drinking window that opens meaningfully from 2024 through 2038+.
