Domaine L'Ostal Cazes is the Roussillon project of the Cazes family, whose roots in the region stretch back generations through their flagship Rivesaltes estate. This rosé draws from vineyards planted on the sun-baked, schist and clay-limestone soils characteristic of the Roussillon plain, where the Tramontane wind strips humidity and concentrates berry skins, driving intensity into even a pale-pressed rosé.
The blend is anchored by Grenache, the dominant variety of the appellation, likely complemented by Syrah and/or Cinsault — a combination that delivers both aromatic lift and textural weight. Vinification follows a direct-press method, preserving pale colour and freshness, with temperature-controlled fermentation to lock in primary aromatics. No extended maceration; the goal is precision over extraction.
What sets this expression apart within Roussillon rosé is the deliberate restraint applied in a region more associated with powerful reds and fortified Grenache — the winemaking actively works against the terroir's instinct toward richness, producing a wine with genuine tension. Drink young, within 1–2 years of vintage, to capture the garrigue-tinged fruit at its most vivid.
