Pascal Jolivet Attitude Rose
฿1,059
Pascal Jolivet founded his négociant-grower house in Sancerre in 1987 with a deliberate mandate: bottle the appellation's terroir character without cosmetic winemaking. The Attitude label was conceived as the purest expression of that philosophy at an accessible tier — no oak, no intervention beyond what the Loire's cool climate demands.
Sancerre's rosé vineyards sit on the appellation's characteristic silex (flint-rich) and Kimmeridgian limestone soils, which drain sharply and stress the vine into producing concentrated, mineral-driven fruit. The continental microclimate — cold winters, warm summers with cool nights — preserves acidity through the growing season.
The wine is made from Pinot Noir via short direct-press or brief cold maceration, fermented in stainless steel to lock in primary fruit and the appellation's signature mineral tension. No oak contact and early bottling preserve the wine's cut and freshness.
What separates this from most Sancerre rosé at this price is the appellation's legal framework: true Sancerre Rosé must be 100% Pinot Noir, giving it a structural seriousness rarely found in Loire rosé outside the appellation. Drink within 2–3 years of vintage for maximum aromatic lift.
