The estate's rosé program draws from Grenache, Syrah, and Cinsault parcels planted on south-facing slopes at 150–250 meters elevation, where morning shade from the Alpilles mountains moderates sugar accumulation.
The fruit undergoes direct pressing with minimal skin contact—typically 4–8 hours—to achieve pale salmon coloration while preserving acidity and mineral extraction from the limestone subsoil. Fermentation occurs in temperature-controlled stainless steel, preserving aromatic volatility and the wine's characteristic salinity. The result is a dry rosé (residual sugar typically under 2 g/L) built for the table rather than aperitif consumption.
