The estate's Symphonie Rosé is produced via direct pressing of Grenache, Cinsault, and Syrah—a method that extracts color and tannin structure while avoiding oxidation. The wine undergoes temperature-controlled fermentation in stainless steel, preserving aromatic volatility and mineral precision. Extended skin contact before pressing builds the wine's salmon-copper hue and subtle phenolic grip, distinguishing it from the pale, one-dimensional rosés common to the region.
