“Le Pacha”
฿฿
SaleChâteau L'Escarelle sits in the heart of Provence's traditional rosé country, where clay-limestone soils and Mediterranean exposure shape wines of precision rather than opulence. "Le Pacha" is the estate's flagship dry rosé, crafted from a blend of regional varieties.
The wine undergoes direct pressing of whole bunches with minimal skin contact—a technique that preserves pale color and emphasizes mineral structure over fruit weight. Fermentation occurs in temperature-controlled stainless steel, preserving aromatic clarity and acidity. The result is bottled young, typically within months of harvest, to capture the wine's fresh, saline character.
What distinguishes "Le Pacha" within Provence's crowded rosé landscape is its deliberate restraint: this is not a fruit-forward or off-dry expression, but a bone-dry wine built on minerality and tension. The pale salmon hue signals the brevity of skin contact—a hallmark of serious Provençal production.
Drink within 1–2 years of vintage for maximum freshness and aromatic intensity. The wine's acidity and mineral spine make it a food-driven aperitif rather than a sipping wine.
