Domaines Ott, founded in 1896, built its reputation on estate-grown Provence rosé long before the category became fashionable — the By Ott label extends that philosophy to Les Baux-de-Provence, an appellation carved from the rugged Alpilles limestone massif. The vineyards sit on shallow, rocky soils of broken limestone over clay, baked by the Mistral wind that strips humidity and concentrates berry skins, driving the wine's characteristically pale colour and taut structure. Grenache, Cinsault, and Syrah are harvested at night to preserve aromatic freshness, then cold-settled and fermented at low temperature in stainless steel to lock in primary fruit without oxidative weight — no oak contact, no malolactic fermentation, preserving the site's natural acidity. What separates By Ott from generic Provence rosé is its Les Baux-de-Provence AOP designation, a stricter sub-appellation demanding lower yields and organic-leaning viticulture, giving the wine a mineral, garrigue-inflected tension absent in broader Côtes de Provence bottlings. Drink within two to three years of vintage to capture the Alpilles limestone salinity at its most vivid.
