Château Paradis sits within the rugged limestone massif of Les Baux-de-Provence, a sub-appellation carved from the Alpilles range where thin, rocky soils over limestone bedrock force vines to root deep and yield small, concentrated clusters. The estate's elevation and the mistral's drying influence keep disease pressure low, supporting organic viticulture across the domaine.
The rosé is built on Grenache with supporting Syrah and Cinsault — a blend that reflects the AOP's traditional palette. Grapes are direct-pressed at low temperature, with the must cold-settled before fermentation in stainless steel at controlled temperatures to lock in aromatic freshness. No oak contact, no malolactic fermentation — a deliberate choice to preserve the site's natural acidity and the variety's red-fruit character.
What separates this from the broader Coteaux d'Aix appellation is the Les Baux-de-Provence AOP designation itself: stricter yield limits and a higher minimum Grenache requirement than its parent appellation, meaning more site-specific expression in every bottle. Drink young, within two to three years of vintage, when the stony mineral lift is at its most vivid.
