Sharaku operates in Shimane Prefecture's Ōnan region, where soft water and cool mountain air define the terroir. The brewery sources Yamada Nishiki rice—Japan's most prized sake variety—and polishes it to 50% of the original grain, placing this expression at the threshold between ginjo and daiginjo classification.
Fermentation occurs under controlled temperature in traditional koji beds, with the mash managed to extract delicate floral compounds while maintaining structural clarity. The result is bottled without additional dilution, preserving the rice's natural mineral spine.
Tojo's house style favors precision over opulence: this is a sake built on restraint, where each aromatic layer emerges distinctly rather than blending into a single impression. The Yamada Nishiki varietal contributes its signature white-flower and subtle stone-fruit character without overstatement.
Best served chilled (45–50°F) to preserve the delicate balance. Optimal drinking window: immediate through 18 months from release.
