Nanbubijin was founded in 1902 in Ninohe, Iwate Prefecture, deep in the Tohoku highlands where winter temperatures regularly drop below −10 °C — a climate the brewery deliberately exploits to slow fermentation and build aromatic complexity without artificial refrigeration. The brewery draws from the Ouu Mountain Range's snowmelt aquifer, an exceptionally soft, low-mineral water that preserves delicate ginjo esters and keeps the palate clean and precise.
This junmai ginjo uses Yamada Nishiki rice polished to a 55% seimaibuai, removing 45% of the outer grain to eliminate lipids and proteins that would otherwise generate off-flavours. Fermentation follows the sokujo (fast-starter) method at low temperature, producing the hallmark ginjo fragrance — predominantly isoamyl acetate — without the added distilled alcohol that defines honjozo styles. No pasteurization details are confirmed for this specific bottling, so that point is omitted.
What separates this expression within Nanbubijin's lineup is its strict junmai designation at the ginjo polish level — a producer choice that prioritises rice-derived umami depth alongside the aromatic lift, a combination most ginjo breweries sacrifice one for the other.
