When Hiroshi Sakurai launched the Dassai brand in 1990, he made a commitment almost without precedent in Japanese brewing: every bottle, across every tier, would be Junmai Daiginjo — the category's most demanding grade. Dassai Future – With Farmers extends that logic outward, foregrounding the contracted Yamada Nishiki growers whose rice underpins the entire range.

The brewery sits deep in the mountain valley of Shuto-cho, Iwakuni City, Yamaguchi Prefecture — a region historically classified for its soft, ultra-pure 'Seiryu' mountain water, purified further on-site. That low-mineral water profile is foundational: it produces a slower, more delicate fermentation, coaxing the Yamada Nishiki's inherent fruit character rather than amplifying lactic sharpness.

Production follows Dassai's signature protocol: rice washed in 10 kg units in running water, soaked approximately 15 minutes, then fermented in small individual tanks with hand-applied koji and temperature-controlled moromi managed by permanent year-round staff — no seasonal toji. Pressing deploys Dassai's commercially pioneered centrifuge separation, extracting sake from mash without pressure to preserve volatile aromatic integrity. Bottling uses the patented Hayata method (Patent 2013-008455): filled cold below 5°C, hot-shower pasteurized, then rapid-cooled — locking freshness at the moment of peak expression.

What distinguishes this expression is its explicit supply-chain narrative: the rice farmer relationship is surfaced as the product's identity, making provenance — not just polish ratio — the organizing principle.
