Damilano's grappa di nebbiolo di Barolo begins with pomace from the winery's own Barolo vineyard holdings in the Langhe hills of Piedmont. The nebbiolo grape skins—residue from red wine fermentation—carry the mineral and tannin structure of one of Italy's most demanding terroirs: clay-limestone soils at 250–350 meters elevation, where autumn fog (nebbia) slows ripening and concentrates phenolic intensity.
The pomace is distilled in traditional copper stills, a technique that preserves the delicate floral and stone-fruit aromatics native to nebbiolo while avoiding the heavy fusel-alcohol profile of industrial methods. Damilano does not age this grappa in wood—it remains unaged or briefly rested, allowing the raw distillate character and the grape's inherent complexity to dominate. This restraint is the grappa's signature: rather than masking nebbiolo's austere personality under oak tannin, the spirit channels the variety's natural white-pepper spice, dried-rose petal, and slate-dust minerality.
At 40–42% ABV, the spirit carries sufficient alcohol to extract and preserve volatile compounds from the pomace, yet remains approachable neat or as a digestivo. The 500 ml format signals its intended use as a post-meal spirit rather than a mixing base.
