In 1973, Benito and Giannola Nonino separated individual grape pomaces for the first time — beginning with near-extinct Picolit — and distilled each variety alone, inventing a legal spirit category (Monovitigno®) that did not exist until they lobbied it into Italian law. This Glera expression applies that same logic to the grape behind Prosecco: 100% single-varietal Glera pomace, destalked, transported to the Percoto distillery in Pavia di Udine, Friuli-Venezia Giulia, and placed into fermentation tanks within one hour of pressing. White pomace is ensilaged under vacuum in stainless-steel tanks at controlled temperature for up to 48 hours before distillation, arresting harmful secondary fermentations while preserving the variety's aromatic signature. Distillation proceeds in handcrafted copper steam discontinuous (bagnomaria) stills — 66 of them across five artisanal sub-distilleries on site — with precise head-and-tail cuts made by hand at each batch. The result is bottled without color additives; no colorants are used across any Nonino expression. What is unusual here: Glera is a Veneto grape distilled in Friuli by a house whose identity is rooted in rescuing forgotten native varieties, turning a commercially ubiquitous sparkling-wine pomace into a terroir-specific, single-varietal grappa that the category rarely attempts at this level of technical discipline. As a non-vintage spirit, drinking window is open from release.
