Cristiani's grappa tradition runs deep in Alba, where the producer has distilled pomace from Piedmont's finest vineyards since the 19th century. The Alba subregion sits on calcareous clay soils at 300–400 meters elevation, where Nebbiolo and Barbera dominate; these high-tannin varieties leave behind skins and seeds rich in phenolic compounds—the raw material for structured grappa.
This expression is distilled in a traditional copper alambic, a pot-still method that emphasizes direct heat and reflux, concentrating volatile aromatics while filtering out harsher congeners. The pomace is not aged in wood, preserving the raw spirit character and allowing the fruit esters from fermentation to dominate. Bottled at standard proof without extended oxidation, it represents the young, vibrant end of the grappa spectrum—a direct window into the vineyard's phenolic signature rather than oak-derived complexity.
The special feature here is transparency of source: Alba pomace carries the mineral, high-acid profile of Nebbiolo country, making this grappa a terroir expression in its own right, not merely a waste-stream byproduct.
