The spirit is distilled from red wine lees — the solids and residual juice left after fermentation — using pot-still methodology in Granmonte's Nakhon Nayok production facility, located within the Khao Yai terroir zone known for its volcanic-influenced soils and afternoon cloud cover that extends ripening cycles.
The production technique recovers aromatic compounds and residual sugars from the pomace, concentrating them through single distillation. At 330 ml, this bottling format suggests craft-scale production rather than industrial output. Red wine lees grappa typically retains tannin structure and darker fruit character from the original fermentation, distinguishing it from white pomace spirits. The Khao Yai provenance — Thailand's primary cool-climate wine region at 400–600 m elevation — adds specificity to what is otherwise a niche category in Southeast Asian spirits production.
