Fattoria Le Pupille's grappa emerges from Poggio Valente, the estate's flagship vineyard site in Maremma's rolling clay-limestone hills southeast of Grosseto. The vineyard's south-facing aspect and maritime-influenced microclimate produce Cabernet Sauvignon and Merlot of sufficient structure to leave pomace worthy of distillation.
Production specifics: Pomace is pot-still distilled in copper alembics, capturing the volatile aromatics of seed and skin without extended oak aging. The spirit remains unaged in glass or stainless steel, preserving the raw, mineral character of the marc rather than pursuing the oxidative rancio development of aged grappas. Bottled at standard proof without cask maturation.
The transgression here is restraint. Where many Tuscan grappas court oak softness, Poggio Valente's expression insists on the pomace itself—the tannin-rich residue of serious red wine production. The result reads as a terroir document: what remains after fermentation tells the story of Maremma's soil and vintage conditions more directly than any aged spirit could.
Drink young and cool, within 3–5 years of bottling, to preserve the volatile top notes.
