Tommasi's Grappa di Recioto Bianca originates from the pomace of Recioto della Valpolicella, the passito wine produced in the hillside vineyards surrounding Pedemonte in Valpolicella, Veneto. The terroir here—limestone-rich soils on steep, south-facing slopes at 200–400 meters elevation—imparts mineral tension to the dried Corvina, Rondinella, and Molinara grapes that feed this spirit.
The production begins with white pomace (skins and stems) from Recioto fermentation, which Tommasi distills in copper alembic stills to preserve aromatic delicacy. Unlike aged grappas, this expression is bottled young, without oak aging, allowing the primary fruit character and floral esters from the pomace to dominate. The result is a clear, unaged eau-de-vie that captures the dried-fruit sweetness inherent to Recioto production—a technical choice that honors the source material rather than imposing wood influence.
The special distinction lies in its origin from Recioto lees specifically, not standard wine pomace, lending a concentrated dried-apricot and honey undertone absent in conventional grappas. Bottled at standard proof without cask maturation, it represents the immediate post-distillation character of Valpolicella's most prestigious passito tradition.
