Salento's flat, deep red terra rossa soils over limestone bedrock retain heat through the night, pushing phenolic ripeness while the Adriatic and Ionian sea breezes moderate daytime temperatures enough to preserve aromatic compounds. The result is fruit concentration that cooler-climate Chardonnay cannot replicate.
Fermentation is conducted in stainless steel to lock in primary fruit character, with partial oak aging used to add textural weight without overwhelming the site's natural richness.
