The vineyards sit within the Valle della Cupa near Monteroni di Lecce, roughly 5 km from Lecce at approximately 100 m elevation, on calcareous soils mixed with clay — the classic Salento karst geology that drives tension and saline lift into white varieties. The microclimate is shaped by simultaneous Adriatic and Ionian sea breezes, which moderate the intense Mediterranean sun and deliver natural acidity and mineral character that the continental interior cannot replicate. Vinification follows controlled-temperature fermentation in stainless steel, preserving primary aromatics and the site's inherent freshness — a pointed contrast to the oak-dominant philosophy applied across the rest of the portfolio. What distinguishes Laicale within the Apollonio range is precisely this restraint: Chardonnay grown on iron-rich calcareous clay in a dual-sea-breeze corridor, handled without wood, producing a textural yet mineral-driven white from a house whose identity is otherwise defined by oak and extraction.
