When Max Schubert built Grange around Shiraz, Penfolds quietly reserved its most uncompromising Cabernet ambition for Bin 707 — a wine that receives 100% new oak maturation, a regime so demanding that most Australian Cabernet producers reserve it only for their flagship. The 2023 draws fruit from Penfolds' multi-regional South Australian network, anchored by Barossa Valley parcels — including the ancient, phylloxera-free deep alluvial and sandy loam soils of Kalimna, where Cabernet Sauvignon vines have grown continuously since the 1880s. Those ancient, low-vigour soils suppress canopy and concentrate berry mass, producing the dense mid-palate architecture that defines the Bin 707 signature.

Vinification follows Penfolds' house discipline: acclimatised pure yeast cultures, temperature-controlled fermentation in stainless steel, and maturation in 100% new American and/or French oak — a split that delivers both vanilla-cedar structure and finer-grained tannin integration. The result is a wine built for the cellar, not the counter. What separates Bin 707 from every peer in its price tier is the deliberate refusal of blending relief: 100% Cabernet Sauvignon, zero varietal softening, in a house whose entire philosophy is built on blending. That transgression is the point. The 2023 vintage is newly released; drinking window conservatively estimated 2028–2045+.
