Vincent Dancer arrived in Chassagne-Montrachet in 1996 with an engineering background and no winemaking lineage — and proceeded to become the village's first organically certified producer (2012), building a house style defined by deliberate restraint rather than extraction or oak imprint. Les Montrevenots sits within the Beaune Premier Cru belt on limestone-and-marl argilo-calcaire soils with a southeast aspect, conditions that push Pinot Noir toward transparency and perfume over weight — precisely what Dancer's approach is designed to amplify rather than correct.
Vinification is uncompromisingly minimal: destemmed grapes, short maceration, native yeasts throughout, occasional punch-down only — no pumping over. Aging proceeds in used barrels exclusively — no new oak purchased since 2019 — with no bâtonnage. The wine is bottled unfined and unfiltered, sealed under Diam 30 from the 2022 vintage onward.
The transgression here is categorical: in a Côte de Beaune where even village-level reds routinely see a percentage of new wood, Dancer's complete elimination of new oak since 2019 is a structural commitment, not a stylistic flourish — the barrel is purely a vessel, not a flavoring agent. The 2022 vintage is described as radiant across the domaine, delivering floral lift and stony complexity; this Beaune Premier Cru is drinking well now through 2030+.
