When Claude Dugat's children Bertrand, Laetitia, and Jeanne established La Gibryotte as a micro-négociant label, they carried forward the same house discipline that made the domaine allocation-only: harvesting by taste rather than laboratory analysis, and a cellar philosophy built around non-intervention. Village-level parcels within Gevrey-Chambertin AOC sit on the Côte de Nuits' characteristic limestone soils threaded with silt and pebbles — a semi-continental microclimate that delivers the tension between ripeness and acidity that defines the appellation's finest expressions. Vinification is 100% destemmed, fermented in concrete tanks with twice-daily punch-downs and zero pump-overs — a deliberate choice to limit oxygen ingress and preserve aromatic purity. Aging proceeds in François Frères cooperage barrels for 15–18 months across two cellars, the first semi-underground for temperature stability. The wine is bottled unfined and unfiltered, with no chaptalization, no acidification, and minimal sulfur. Where most Gevrey-Chambertin Villages wines lean into extraction and oak weight, La Gibryotte's concrete-tank, no-pump-over protocol produces a mineral-driven, silky-tannin profile that reads closer to Premier Cru precision. The warm, dry 2022 vintage delivered ripe, clean fruit with natural energy; approachable now, with structure to develop over the medium term.
