−4%Albéric Bichot made a structural decision that most large Burgundy houses have not: rather than centralising vinification in Beaune, he built six geographically dispersed estate wineries, each processing only the fruit of its own sub-region. The Chambolle-Musigny Les Chabiots passes through Domaine du Clos Frantin in the Côte de Nuits, where marl and gravel soils over Jurassic limestone bedrock deliver the tension that separates Chambolle's Premier Crus from the village tier. Les Chabiots sits on the southern flank of the appellation, where the slope aspect and shallow topsoil concentrate Pinot Noir's aromatic intensity without sacrificing the commune's characteristic finesse. Vinification follows a cold soak of 6–8 days, then 18–20 days total maceration in thermoregulated conical oak vats, followed by 12–16 months in light-toast Tronçais and Allier barrels at 20–30% new oak — calibrated to amplify climat character rather than impose wood. Gravity racking is used throughout to minimise handling. What distinguishes this cuvée within the Bichot portfolio is its organic certification from the 2018 vintage onward, applied across all estate domaine wines — rare discipline for a house operating at this scale. The 2019 vintage delivered ripe, structured Pinot Noir with concentration and depth; the wine rewards 2–3 years of further cellaring but is already showing the floral lift and mineral grip that define Les Chabiots.
