Domaine Hubert Lignier has farmed the clay-limestone hillsides of Morey-Saint-Denis for three generations, with Les Chaffots occupying a northeast-facing parcel at 280–320 meters elevation on the Côte de Nuits. The site's shallow topsoil over limestone bedrock produces wines of structural precision rather than opulence.
Pinot Noir fruit is destemmed and fermented in open wooden vats with temperature control, then aged 12–15 months in French oak (25–30% new). The cooler fermentation and extended élevage in older wood emphasize mineral tension and mid-palate definition over extraction. Malolactic fermentation occurs naturally in barrel, softening acidity while preserving the wine's linear architecture.
Les Chaffots distinguishes itself through its persistent white-pepper spice and flint minerality—signatures of the limestone subsoil—rather than dark-fruit dominance. The 1er Cru designation reflects the vineyard's consistent ability to produce wines with aging potential; this expression drinks well from release but rewards 5–8 years of bottle age as tannins integrate and secondary flavors emerge.
