Since 2014, Nicolas Groffier has withheld half of every release for sale at maturity — a deliberate counter-speculative act that signals exactly how seriously this domaine treats premature consumption. That policy applies in full to this Bonnes-Mares, sourced from roughly one hectare on the Morey-Saint-Denis side of the Grand Cru, where shallow calcaire brun over limestone bedrock forces roots deep, concentrating mineral tension and darkening the fruit profile relative to the Chambolle flank. The site's position and soil structure produce a denser, more iron-edged expression than the appellation's Chambolle parcels. In the cellar, a high proportion of whole clusters is retained — a deliberate house signature for Bonnes-Mares and Les Sentiers — before destemmed berries are cold-soaked at 10–12°C for 4–5 days in stainless steel, then fermented with indigenous yeasts over a total maceration of 17–20 days. Aging runs approximately 12 months in French oak (new-oak usage progressively reduced under Nicolas), after which the wine returns to stainless vat until bottling unfined and unfiltered — an unusually short barrel stay for a Burgundy Grand Cru, preserving primary aromatic precision over wood-derived structure. The 2014 vintage delivered cool-season acidity and firm tannin architecture; the wine is entering its secondary phase but Nicolas's own maturity-release philosophy suggests patience through at least 2026–2030.
