The house, established in 1904 in Alba, built its reputation on restraint—allowing the grape's tannin architecture to speak rather than imposing new oak overlay.
This expression follows traditional Barolo protocol: extended maceration on skins, fermentation in temperature-controlled stainless steel, then aging in large botti (Slavonian oak casks) rather than barriques. The scale of the vessel—typically 30–50 hectoliters—permits slow oxidative evolution without the vanilla or toast imprint of French oak, preserving the wine's mineral spine and allowing nebbiolo's naturally high tannins to polymerize into silk rather than grip.
Prunotto's commitment to larger-format oak distinguishes it within the modern Barolo landscape, where many producers have shifted toward barriques for extraction and aging speed. This choice extends the drinking window and favors secondary aromatics over primary fruit.
Expect a wine of medium-full body with structured acidity and pronounced tannin architecture—characteristic of Barolo's Nebbiolo base. The vintage will show dried rose, tar, and mineral tension in youth, softening toward leather and truffle complexity with 5–10 years of bottle age.
