SaleArnaldo Caprai's Collepiano represents the modern standard-bearer of Sagrantino, the indigenous red varietal that defines Montefalco's identity. The vineyard sits on volcanic clay and limestone soils at 250–350 meters elevation on the eastern slopes of the Montefalco plateau in central Umbria, where diurnal temperature swings sharpen acidity and deepen phenolic ripeness.
Caprai employs temperature-controlled fermentation in stainless steel, followed by 12 months in large Slavonian oak casks—a deliberate choice that avoids new-oak overlay and allows the varietal's structural integrity to dominate. Sagrantino's naturally high tannin load (among Italy's most assertive) is managed through extended maceration and careful extraction rather than oak influence. The wine is bottled unfiltered, preserving the mineral grip characteristic of volcanic terroir.
Collepiano's transgression lies in its refusal of softness: this is a wine built for 15–20 year cellaring, where secondary flavors—leather, dried plum, graphite—emerge only after the initial tannin wall softens. Current releases show the vintage's structure without premature approachability.
