When Maurice Drouhin began acquiring Premier and Grand Cru parcels in the early 20th century, the house's guiding conviction was that Burgundy's greatest sites should be farmed, not merely sourced — a principle that drove the full biodynamic conversion completed under Philippe Drouhin, with ECOCERT certification awarded for the 2009 vintage across 100 hectares. Corton, the Côte de Beaune's sole red Grand Cru, sits on a broad hill of iron-rich limestone and clay-marl soils at elevation, where the aspect and drainage concentrate Pinot Noir into a more structured, darker-fruited register than the silkier Côte de Nuits Grand Crus. Vinification employs partial whole-cluster inclusion (up to 40–50% in ripe vintages), fermentation in small open vats with pigeage and pumping-over over 2–3 weeks, driven entirely by indigenous yeasts. Élevage proceeds in 228L or 300L French high-forest oak barrels for 12–18 months, with new oak proportions elevated above the house's village-level norm for Grand Cru. What distinguishes Drouhin's Corton within the appellation is the deliberate restraint of extraction — the house philosophy of finesse over power holds even at Grand Cru level, where many producers push for maximum concentration. The 2018 vintage delivered excellent phenolic maturity in reds with increased whole-cluster vinification, producing wines of depth and structural grip that reward 5–12 years of cellaring.
