SaleDomaine Jaume's rosé emerges from Vinsobres, a hilltop village in the southern Rhône where granite bedrock and clay soils produce wines of unusual structure for the category. The estate farms parcels at 300–400 meters elevation on north-facing aspects that moderate summer heat and preserve acidity—a critical advantage in Provence-adjacent territory where overripeness threatens balance.
Production follows direct-press methodology: whole Grenache clusters move to the press within hours of harvest, limiting skin contact to 4–6 hours. This brief maceration yields pale salmon color while extracting mineral tannins from seed and skin without the phenolic heaviness that extended maceration introduces. Fermentation occurs in temperature-controlled stainless steel, preserving aromatic volatility and acidity. The wine remains unwooded, allowing granite minerality and varietal character to dominate.
The special signature here is Grenache's savory backbone—this is not a fruit-forward summer sipper but a structured, food-compatible rosé with the grip to stand beside roasted proteins and umami-forward preparations. Vinsobres' elevation and aspect gift the wine a salinity and herbal undertone absent from lower-altitude Rhône rosés.
