Garofoli's Komaros originates in the Marche region of central Italy, where the producer works vineyards planted on calcareous clay soils at moderate elevation along the Adriatic foothills. The site's limestone bedrock and cool maritime influence shape wines of precision rather than opulence.
This rosé is produced via direct pressing of red-wine varieties, minimizing skin contact to preserve pale color and aromatic delicacy. The wine ferments in temperature-controlled stainless steel, preserving acidity and mineral definition. Garofoli releases Komaros as a dry expression—no residual sugar—positioning it as a savory aperitif and table wine rather than a fruit-forward summer sipper.
The special character lies in its limestone minerality: the wine carries a saline, chalky undertone typical of Marche's geological signature, anchoring the red-fruit aromatics in stone and salt rather than candy. This is a rosé built for cuisine, not contemplation alone.
