Lavignone Piemonte Rosato DOC (750 ml)
฿฿
Pico Maccario's Lavignone emerges from the rolling hills of Barbera d'Asti in southeastern Piedmont, where clay-limestone soils and continental Alpine influence shape lean, mineral-driven reds—and in this case, a rosato of uncommon structure. The winery employs whole-cluster pressing of Barbera, a technique that minimizes skin extraction while preserving the varietal's natural acidity and tannin backbone. The result is a dry rosé that reads more like a light red than a typical summer pink: brief skin contact yields pale salmon color, while fermentation in stainless steel preserves the varietal's signature cherry-pit and herbal character without oxidative drift. Lavignone sits at the intersection of Piedmontese rigor and rosé freshness—a wine that refuses to soften its edges for convention. Drink 2024–2026 at cellar temperature (12–14°C) to unlock its mineral spine.

Sommelier’s pick: Vitello tonnato (veal with anchovy-tuna sauce) — the wine's acidity cuts through rich mayo, cherry notes echo the veal · Grilled branzino with lemon and herbs — mineral salinity mirrors the fish; herbal notes complement fennel fronds · Tajarin al tartufo (thin egg pasta with white truffle shavings) — dry structure prevents overshadowing delicate truffle; acidity cleanses between bites
