The wine is produced from a blend of Assyrtiko (white) and local red varieties, vinified with minimal skin contact—a technique that yields pale salmon color and preserves acidity rather than extracting tannin. Fermentation occurs in temperature-controlled stainless steel, preserving aromatic freshness and the wine's natural salinity. No oak aging; the wine is bottled young to capture the limestone minerality and bright acidity that define Monemvasia's terroir.
The special feature here is the Assyrtiko component—a white variety prized for its mineral intensity and natural acidity—which gives this rosé an unusual structural grip and savory character rather than the soft fruit-forward profile typical of Mediterranean pinks.
