−5%Matsui Shuzo, a Tottori company founded in 1910, acquired its whisky distillation license only in 2015 — meaning the San-In Blended sits in a tier built on sourced malt and grain whiskies from undisclosed domestic and international partners, not in-house distillate. That provenance gap is the buyer's first fact to hold. What the distillery does control is the water: deep-aquifer groundwater filtered through the volcanic basalt of Mt. Daisen (1,729 m), an extinct volcano whose mineral profile strips hardness and imparts the house's signature soft, low-astringency mouthfeel before a single cask is filled. Tottori's Sea of Japan coastal climate swings from near-freezing winters to ~38 °C summers, compressing maturation cycles in a manner the producer explicitly compares to Islay. Primary maturation is in ex-bourbon American white oak; the exact cask split, age composition, and grain-to-malt ratio are undisclosed. At the entry tier, the San-In is bottled in the 43–46% ABV range and is not confirmed as un-chill-filtered. The special feature here is geographic rather than technical: San-In is one of the few Japanese blended whiskies anchored to Japan's least populous, most geographically isolated prefecture — a deliberate regional identity play in a category dominated by Suntory and Nikka's urban-facing brands. Best approached as a highball or on-the-rocks format per the producer's own NAS guidance.
