−4%Toki — Japanese for 'time' — is the expression Suntory built specifically to demonstrate the Tsukuriwake philosophy in its most accessible form: the deliberate production of stylistically diverse spirits within a single house, then blended without trading a single cask externally. The name anchors a technical reality: every component is drawn from Suntory's own three distilleries, each operating under radically different conditions.
Yamazaki (25 m, warm-humid confluence of the Katsura, Uji, and Kizu rivers) contributes pot-still malt matured in American white oak and ex-bourbon casks; Hakushu (708 m, granite-filtered alpine water, ~5°C cooler annual average) adds lightly peated malt fermented exclusively in wooden washbacks where lactobacillus microflora shape a distinctively herbal, green character; Chita (coastal Aichi, column-distilled corn-dominant grain at ~94% ABV) provides the structural spine. The cool Hakushu elevation slows maturation, while Yamazaki's humidity accelerates it — the blend deliberately exploits both tempos simultaneously.
Bottled at 43% ABV, chill-filtered, Toki is the only Suntory blended whisky positioned as an everyday expression rather than a prestige release, yet it draws from the same distillate pools as Hibiki Harmony. What no peer blend at this price tier replicates is the Hakushu wooden-washback fermentation character — lactobacillus-influenced, subtly smoky green apple — sitting alongside Yamazaki's warmer stone-fruit register.
