Dewar's 25 Years Old (750 ml)

John Dewar founded his Perth wine and spirits shop in 1846, but it was the Double Aging technique — blending first, then re-casking the finished blend for a minimum six months — that defined the house and is now credited as the origin of the modern marrying practice in Scotch blending. At 25 years, that process operates at its most extended scale. Aberfeldy Distillery, drawing water from the Pitilie Burn artesian spring on the southern bank of the upper Tay in Highland Perthshire, supplies the heart malt: unpeated Optic-variety barley, fermented in larch washbacks with an extra-long fermentation cycle, then double-distilled in medium-height onion-shaped copper pot stills to a new make of 68–72% ABV. That extended fermentation is a deliberate production decision to develop the heather-honey character that anchors every Dewar's blend. Supporting malts from Craigellachie's worm-tub condensers, Royal Brackla, Aultmore, and Macduff are blended alongside grain whisky — up to 30 component whiskies in total — by Master Blender Stephanie Macleod, primarily by nosing at the Glasgow facility, before the assembled blend is returned to American oak ex-bourbon casks for the final marrying rest. What separates the 25 Year Old within the portfolio is the sheer duration across which the Double Aging integration operates: a quarter-century of primary maturation followed by that additional oak contact produces a textural density and aromatic convergence that shorter expressions cannot replicate.
