Nikka YOICHI Discovery - Non-Peated (700 ml)

When Masataka Taketsuru established Yoichi in 1934 at the base of the Shakotan Peninsula — mountains on three sides, the Sea of Japan directly ahead — he was deliberately recreating Scottish Highland conditions on Hokkaido's northwest coast. The distillery draws snowmelt from the Yoichi River, and its cool, fog-laden maritime microclimate drives slow maturation and the retention of dense, waxy spirit character. The Discovery Non-Peated expression isolates a single variable: Yoichi's rare direct coal-fired pot still distillation with straight-head stills and downward lyne arms — a method retained from Longmorn, Scotland, and largely abandoned globally for its labour intensity — applied here to unpeated malt, removing smoke from the equation entirely to expose the raw textural weight and heavy congener profile the coal-fire technique produces. What remains is the distillery's structural signature: the oily, coastal density that coal-firing generates, without peat acting as a masking or amplifying agent. This is the special feature: virtually no other distillery in the world still coal-fires its stills, and no other Yoichi release foregrounds that technique so nakedly. As a non-vintage, no-age-statement release in the Discovery series, it is designed to communicate distillery character over cask influence, making oak a supporting rather than dominant voice.
