Bushmills received its distilling licence in 1608, making the County Antrim operation the oldest licensed whiskey distillery on record — a fact that frames every decision made in its stone-walled stillhouse. The distillery sits metres from the River Bush in the northeast corner of Ireland, where the damp Atlantic microclimate slows evaporation and extends the maturation dialogue between spirit and wood.
The 21 Year Old is built on triple distillation through copper pot stills, a house signature that strips sulphur and produces a lighter, more delicate new-make than double-distilled peers — giving the long oak aging a clean canvas. Maturation runs across ex-Oloroso sherry butts, port pipes, and ex-bourbon barrels, with the final months spent in Madeira casks, layering dried fruit and oxidative complexity without masking the grain's natural sweetness.
What separates this expression from most 21-year Irish malts is the four-cask finishing regime — a depth of wood interaction rarely attempted at this age statement in the Irish category, where most distilleries rely on one or two cask types. The result carries dried fig, toasted walnut, and dark chocolate alongside the honeyed cereal character that triple distillation preserves. Drink now through 2032.
