The Dalmore distillery, established in 1839 on the Cromarty Firth in the Northern Highlands, has built its identity around a deliberate sherry-cask finishing program that predates the modern industry's obsession with wood management by decades. The distillery's position on the firth moderates temperature swings, slowing maturation and allowing the spirit extended contact with wood without aggressive extraction.

The 18 Year Old is constructed in two distinct phases: an extended maturation in American white oak ex-bourbon barrels, followed by a finishing period in Matusalem oloroso sherry butts — 30-year-old casks sourced from González Byass in Jerez. This specific cask combination is the defining technical signature of the expression, with the oloroso contributing dried fruit concentration and oxidative depth that the bourbon wood alone cannot deliver.

What separates the 18 from younger Dalmore expressions is the proportion of time spent in Matusalem wood: the finishing is longer and more pronounced than in the 12 or 15 Year Old, producing a denser, more resinous character. Bottled at 43% ABV, the whisky is non-chill-filtered in presentation but retains approachability at standard serving temperatures. The 18 Year Old rewards decanting in the glass for 10–15 minutes to open fully.
